Collection: Proofing Baskets
To bake the perfect classic sourdough loaf, you need a good proofing basket also known as a bread banneton. We believe these are the best, as they are very functional and absorbs a lot of the extra water which creates a nice working surface for sourdough bread scoring. A proofing basket helps to maintain a beautiful shape for your dough as it rests before baking.
Our variety of proofing baskets are made out of sustainable compressed woodpulp and they are very durable for both home bakers and professionals. Be sure to dry them well after each bake and never stack them directly on top of each other if they are wet.
If you are new to sourdough baking we recommend using a cloth as this will help the dough to release from the proofing basket. If you are baking with a lot of whole grain, the cloth is also a good choice. The cloth fabric can be washed in a washing machine at 40 degrees (104F).
When we prepare our proofing baskets for a sourdough dough, we add rice flour and finely sifted wheat flour in a 50/50 ratio, this will also prevent the dough from sticking to the proofing basket as it cold ferments over night.
Never bake the proofing baskets in the oven, it's only meant to hold the shape of the dough and never soak or clean the proofing basket in the dishwasher. Simply use a brush to remove excess flour if needed.
